Jenny RD’s Kitchen: Mini Eggplant Healthy Pizza

Try this healthy pizza from Jenny RD’s Kitchen!  Satisfy your pizza cravings in a healthy way!



Healthy Pizza Ingredients

*Makes 4 servings

  • 1 medium eggplant
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1 cup no sugar added tomato sauce
  • 1/2 cup spinach, chopped
  • 1/2 cup green bell peppers, chopped
  • 1 cup low-fat shredded cheese
  • 16 slices turkey pepperoni or turkey bacon, sliced into quarters

Healthy Pizza Directions:

  1. Preheat oven to 350 degrees F and line a baking sheet with aluminum foil
  2. Slice the eggplant into 1 inch width, forming the “crust” of the pizzas
  3. Place eggplant slices on a paper towel and rub the tops with salt. (Salt helps to remove the water from the eggplant.) Allow the moisture to absorb out of the eggplant by leaving them on the paper towel for 30 minutes
  4. Evenly drizzle the olive oil on the tops of all the eggplants and sprinkle with Italian seasoning
  5. Place eggplants on the baking sheet and bake for 20 minutes
  6. Remove from the oven and change the oven to the broil setting
  7. Assembly- Eggplant > tomato sauce > Spinach > Green peppers > Cheese > Turkey pepperoni or bacon
  8. Broil in the oven for 2-4 minutes, until cheese bubbles and becomes golden

Note:  ~240 calories, 10g protein per serving size (recipe makes four servings)
